Tropical Feast
When I think of tropical vacations I think of mountains of freshly caught local seafood. I dream of buckets of prawns, piles of scallops and freshly caught fish. I also love tropical fruit such as mangoes, pineapples, bananas and paw paw. I love the fantastic colours of a tropical fruit platters and their tangy taste. I'm also a big fan of the humble coconut and love it in everything from coconut prawns to ice-cream and Pina Coladas! It's also great just picked off the tree and split open - it tastes particularly refreshing when the flesh is eaten chilled.

Summer is here and it's time to entertain with friends and take it all outdoors. Here are a few things that I really look forward to in summer :- chilled seafood on ice, I love the amazing, firey colour of lobsters and prawns. I also love fresh, healthy salads with tangy dressings; succulent summer fruits, old fashioned icy poles on a hot summer's day; fish and chips on the beach and home made fruit flavoured gelatis.

Ice-Cream Treats
A day at the beach goes hand in hand with a scoop of ice-cream in a cone. Who doesn't love ice-cream? When the heat gets too much do as the Italians do and surrender to the coolest, fruitest, creamiest ice-creams and sorbets around. Ice-cream would have to be the most tempting of all summer treats. Either whip up a batch of homemade semi freddo in your favourite flavour packed full of fruity pieces or head down to the local gelateria for a scoop or two of luscious strawberry, tangy mango or refreshing lemon!
Summer Fresh
With summer comes an abundance of fresh, seasonal produce - think ripe summer fruits and the fresh flavours of the sea, perfect for a sunny afternoon of indulgence. Sweet prawns and lobster require little adornment or preparation but are full of flavour with a splash of lime and some chopped chillies. Mussels, scallops, oysters and calamari - the ocean's bounty is a perfect choice for fast, fresh and tasty meals. For a refreshing treat everyone is sure to adore finishing off their meal with freshly sliced fruit and a spoonful of icy sorbet!
Lemon Zest
It's summertime and the living is easy. Cool yourself down with a splash of citrus - think of jugs of chilled homemade lemonade on a hot summer's afternoon or a tangy lemon granita. How about a slice of key lime pie or tarte au citron as the perfect sweet ending to a lazy day by the pool or a sun kissed day at the beach. Lemon and limes also add a zesty tang to summer salads, pan fried haloumi cheese, slices of smoked salmon and freshly shucked oysters.
Summer Pink
Strawberries and raspberries are as enticing as summer itself. Blush-tinted and juicy, their fragrant sweetness and soft texture make them the pick of the summer fruits. Divine crushed in a berry coulis, delicious as a topping for cakes and tarts, heavenly mixed into ice-cream and sorbets or simply prefect on the own! And there's no better way to end a languid summer's day than with a frozen strawberry Daicquiri!

Food For Thought
Straight from Mother Nature
The foods you eat shouldn't be dictated by whether the make you fat or thin,
but by the goodness you get out of each bite.
I always try to eat produce that is season.
I buy organic fruit and vegetables whenever possible.
When it comes down to eat, if it's recently fallen from the tree or plucked from the ground,
I know it's better for me and my family.
