In honour of Anzac Day - here is a recipe for an old favourite -
Quick and easy to make .... and totally delicious!

Anzac Biscuits

  • 1/3 cup (75g) sugar
  • 2/3 cup (60g) coconut
  • ¾ cup (70g) rolled oats
  • 50 g butter
  • 1 tablespoon golden syrup
  • ½ teaspoon bicarbonate of soda
  • 1 tablespoon boiling water

1. Preheat oven to 170°C. Line 2 oven trays with non-stick baking paper.
2. Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup. Dissolve bicarbonate of soda in the boiling water and add to butter and golden syrup. Stir butter mixture into the dry ingredients.
3. Shape level tablespoons of mixture into balls and place onto prepared trays, about 5cm apart. Press to flatten.
4. Bake for about 12 minutes or until golden brown.

They are simple and delicious... and to be honest, I could eat them all year round... and often we do have them outside of the Anzac Day period. Your recipe uses a lot less butter than the one I made yesterday, amazing how many different recipes there are out there xo
